-3 cups oats, quick or regular

-1 c packed brown sugar

-2 tsp baking powder

-1 tsp salt

-1 ½ tsp cinnamon

-2 eggs

-1 c milk of your choice. I use soy

-½ c melted butter

  1. Combine oats, brown sugar, baking powder, salt, and cinnamon.
  2. In another bowl mix eggs, milk, and butter. Stir into oat mixture.
  3. Spoon mixture into a greased 9 “ square pan. Bake at 350 for about 40 min or until set. I like it a tad underbaked. 
  4. Serve with additional milk, fruit, raisins, honey, or whatever tastes good to you! I enjoy mine with blueberries.

Mornings here in Ohio have been very frigid, so this is the perfect comfort breakfast! The ingredients are simple and you probably already have them on hand. It takes only a few minutes to prepare. Because there are only two of us at home, we are able to enjoy this oatmeal for a couple of mornings.
