Welcome, year 2022! Many people reflect on the previous calendar year and talk about the good, bad, and the ugly on New Year’s Eve. Here’s hoping 2021 was good to you. While you, your family, and friends are putting life in perspective, you need to do so with some good food and drink on hand, right? 

Since the big countdown to the new year isn’t until tomorrow night you still have time to run to the store and grab only 5 ingredients (6 if you count the chips to dip) for a fabulous dip that is a great addition to any get-together. I made this a couple of years ago and my nephew Danny loved it so I keep it on my appetizer shortlist. This dip is a good choice if you’re hosting because you need to keep it warm for maximum cheesy goodness!

Spinach Artichoke Dip

-1 pack of frozen spinach, thawed and squeezed dry of water

-¾ lb of cubed, white American cheese. 

– 1 can of drained artichoke hearts, coarsely chopped

-1 can of Rotel. Choose your spice level.

-6 oz shredded parmesan cheese

In a large saucepan, place American cheese, artichoke hearts, and Rotel. Melt together on medium heat, stirring often. Add the parm cheese until melted then pour into a 1-quart baking dish. Keep warm and serve with crackers or tortilla chips. Delicious!
