An acquaintance of mine, Nick, one of the co-owners of my favorite decor shop, SPRUCE, mentioned he had eaten a unique cake while on a work excursion. He tried and loved Mayonnaise Cake! The idea intrigued me so I decided to investigate the concept. Boy, was he right! This Mayonnaise Cake is everything you want in a chocolate cake. It’s rich, flavorful, has a great cake crumb, and is perfect when you want to satisfy your chocolate craving. 

Mayonnaise Cake originated during the Great Depression when fresh ingredients were hard to acquire. Since mayo contains eggs and oil, it makes perfect sense that it can be used in a chocolate cake recipe. Don’t fret! This cake tastes nothing like what you spread on your ham and cheese sandwich. I taste-tested this cake for my extended family and got a big thumbs up so I highly recommend you try it. Don’t forget the icing, it’s incredible!
