Chicken Cacciatore
-4 to 6 chicken thighs, skin removed (I used 4 for 2 people and had leftovers)
-enough flour to coat the chicken
-olive oil (Enough to coat the bottom of a stockpot)
-1 chopped onion
-sliced cremini mushrooms (I used about 15) Skip them if you’re not a fan
-minced garlic (I used about 5 large cloves)
-1 red and 1 green pepper thinly sliced
-½ c or so of white wine
-oregano and rosemary to taste
-1 28 oz can whole tomatoes ( I used kitchen shears to cut them up a little)
-salt and pepper, of course!

-Salt and pepper the chicken then toss them in a bowl with the flour to coat.
-Heat the oil until simmering and sear the chicken, on both sides, until brown. (I used my heavy enamel stock pot) Remove chicken to a plate.
-Add onion and mushrooms and cook until a little soft. Do the same after adding garlic and peppers.
-Add the wine and boil scraping all the brown bits. Reduce the liquid to half.
-Add the spices, tomatoes, and its juice.
-Return the chicken to the pot until it’s cooked through (165 degrees) I kept my pot on low for about an hour so the flavors would meld. My sauce needed thickening so I added some tomato paste with a bit of the liquid from the pot until I got the consistency I liked.
-I served it over rice. It was delicious!

If you’ve had enough burgers and dogs for a while, try this recipe! One-pot recipes are so easy, especially if don’t want to spend your late afternoons in the kitchen.
I’ve tried several chicken cacciatore recipes in the past that were mediocre. I combined a couple of different ingredients in several recipes and I’m sticking with this one! My husband doesn’t particularly care for chicken thighs but most cacciatore recipes call for them. I always used breasts so that’s probably why my previous attempts were just so-so. He gave the chicken thighs in this a thumbs up!
It’s easy, and delicious. With this dish, you get to use some of those fresh summer veggies. Hope you enjoy it!
