With my husband working from home this past year, taking a half-hour to eat lunch together is something we look forward to each day. I haven’t sat down to eat a meal halfway through the day since I was a kid scoring a peanut butter and jelly sandwich and some nacho cheese Doritos. For years, lunch has been a grab-and-go ritual to get something in my stomach before an afternoon snack, then dinner. I actually look forward to taking some time in the middle of the day when we catch each other up on our morning activities and have a bite. 

To keep our choices healthy, we’ve been mostly eating salads or leftovers from the previous night’s meal. With these hot summer days, the produce in the stores and farm markets are more fresh and delicious. Below is a quick noon-time salad that will get some veggies into your body and keep you satisfied until dinner. It takes under 5 minutes to make and is a refreshing deviation from a regular lettuce salad. It’s great with some grainy types of crackers for some crunch and a cold glass of iced tea. It’s actually become somewhat of a staple menu item for us during the spring and summer months so I thought I’d share. Enjoy!

Quick Greek Lunch Salad

  • Whatever fresh tomatoes you like. I mostly use cherry or Roma
  • Cucumbers. I like English ones sliced super thin or cut in thick wedges.
  • Pitted Calamata olives
  • Feta cheese
  • A drizzle of your favorite Greek salad dressing or oil and balsamic vinegar. That’s it! So simple yet delicious!
