As you may know from previous posts, my Mom had a sweet tooth. She loved pastries, candy, cake, and pie. Holidays were a sugar fest! 

For several years during the Easter holiday in the 1970s, she made the infamous Bunny Cake! It was the coolest creation, and I was thrilled she made it especially for my siblings and me to enjoy after Easter dinner.

This cake was a bit intricate. Mom had to bake them, then cut them to make the ears, face, and grand bow tie. No matter the process, I was usually by her side. Someone needed to lick the beaters, right? 

My job was to gather the jelly beans and the thin licorice pieces together to decorate his tie and make his mouth. First, Mom would wrap foil (total 70s!) around a piece of cardboard as a serving platter, then place the cut pieces together to make the bunny’s face. 

But Mom had the important job of icing the cake and decorating it. My nose was most likely inches from Mom’s work, antsy to get my little hands on a rogue jelly bean. 

Looking back, she probably didn’t allow me to help because we usually had a guest or two for dinner. I understand now that she wanted him to look handsome and good enough to eat without serving a piece with my fingerprints in the icing. 

I’m sorry I don’t have a picture of Mom’s Easter Bunny creation, but it’s engraved in my memory. She always made an extra effort to make the holidays memorable with gestures like this. Thanks, Mom! Happy Easter to all who celebrate!
