Classic Chicken Pot Pie

-⅓ c butter

-⅓ c flour

-1 small diced onion

-1¾ c or so chicken broth

-⅔ c milk

-2 c cooked, diced chicken

-1-10 oz frozen peas and carrots or whatever veggies you like, steamed for only a couple of minutes

-crust for a 9” pie crust OR 6-8 biscuits, homemade or refrigerated

-salt/pepper to taste

  1. In a large skillet, melt butter. Blend in flour, onion, s&p. Stir constantly until the mixture is smooth and bubbly. 
  2. Remove from heat. Stir in broth and milk. Heat to boiling. Stir constantly and boil for 1 minute. If it gets a little too thick, add more chicken broth
  3. Add chicken and veggies. 
  4. Pour filling into pie crust. (If you like your crust shiny, brush it with an egg yolk mixed with a bit of water.) Bake in 375 oven for about 45 min. OR…. 
  5. Pour filling into an 8×8 pan (you’ll have leftovers) or a 9×13. Bake the biscuits for half the suggested time then place them on top of the filling. (this is so the bottoms are brown but don’t get mushy) Bake until the biscuits are brown, 375 oven.

This is my delicious and classic chicken pot pie recipe! It’s easy but could be a little time-consuming. The new fad is making it with biscuits on top instead of the traditional pie crust. I thought I’d play around with this recipe to see if I could make it just as delicious but with some shortcuts. 

For my pot pie recipe, I’ve always made my own pie crust and cooked fresh chicken. This time I bought a rotisserie chicken at my local grocery store. Easy. Then I grabbed some refrigerated biscuits. Easy. I could have made homemade biscuits but wanted to experiment with quicker options.

The results? Really good!  It’s pot pie turned cream chicken over biscuits. Two recipes in one. If you don’t have extra time to make a homemade crust and bake your own chicken, it’s ok! You’re busy. Try this instead.

This recipe makes a lot of filling. Since it’s only my husband and me at home, I made it in an 8×8 dish and still had enough for another meal using fresh biscuits. Hope you enjoy it..we do!
